New Mexico Cuisine

One of the differences between the New Mexico cuisine, Mexican cuisine, and Tex-Mex cuisine is the chile pepper used. Chile peppers are an agricultural product of the state of New Mexico. They are either green or red, depending on their ripeness when picked. They are sold throughout the year and can be stored easily in the freezer.

The cuisine of New Mexico is also different in that the spices and sauces are different from those used in Mexico and the dishes have more meat and fewer beans. This cuisine is influenced by the Southern Mexico state of Chihuahua, which is known for its dishes having more meat.

The dishes of New Mexico usually have the same name as the Mexican food such as burritos, chimichangas, and tacos. Most use the same ingredients with the exception being the home-grown chile peppers. In a restaurant serving Mexican food in this state, you may find fish tacos and shrimp enchiladas on the menu.

The chorizo, or spicy sausage, used in New Mexico dishes has a different taste than that of other Mexican cuisines. Chorizo is a spicy sausage seasoned with red chile and garlic and is served as a breakfast food. New Mexico tortillas are usually thicker and less chewy than tortillas found in other places. The traditional dish of Posole, a stew, New Mexico red chilescontains more green chiles than other Mexican cuisines.

Typically salsa includes tomatoes, chiles, onions, and other spices. Cilantro is added to New Mexico salsa. Picante sauce is very common in New Mexico cuisine. It adds an extra punch of heat to a dish. The salsa picante is a thin sauce with pureed red peppers, onions, and tomatoes with added spices. Some of the same spices are used in other dishes of New Mexico.

When dining out in New Mexico, the dish that is served may have chile sauce on top, which is hot. If your taste buds are not used to hot foods, you should start with the salsa.

You will find that Mexican foods are prepared differently in various parts of the United States. If you order pizza in New Mexico, you will find that chiles, which are a stape in New Mexico cuisine, are used as a pizza topping and on hamburgers.
