Ground Beef and Black Bean
Nachos
| 1 pound lean ground beef, crumbled |
| 1 medium onion,chopped |
| 1 (15 oz) can black beans, rinsed and
drained |
| 1/2 teaspoon chili powder |
| 6 (6 inch) corn torillas |
| 1/4 cup fresh cilantro, minced |
| 2 (4 oz cans) chopped green chiles |
| 3/4 cup Monterey Jack cheese, shredded |
| Fresh or bottled salsa |
1. Preheat oven to 350F.
2. Mash or puree the beans into a paste. Add the chili
powder, stirring well.
3. In a large skillet, brown the ground beef and onion over
medium heat for 8 to 10 minutes until the beef is no longer
pink. Drain any excess oil.
4. Place tortillas on a baking sheet. Spread three
tablespoons of the bean mixture on each tortilla and sprinkle
with cilantro.
5. Spoon the ground beef mixture over each tortilla. Top
each tortilla with 2 tablespoons green chiles and 2 tablespoons
cheese.
6. Place tortillas in oven and bake about 20 minutes until
cheese melts.
7. Cut each tortilla into 4 wedges to serve as appetizers.
Serve immediately with fresh or bottled
salsa.
